I have a dish for you that I hope is adaptable to both winter and summer as well. A very easy marinade with a quite a delicate flavour. We just served the fish with veg and potatoes.
White fish fillets – up to four
4 tablespoons olive oil
4 tablespoons fresh parsley, finely chopped
4 tablespoons fresh coriander, finely chopped
6 tablespoons fresh lemon juice
1 lime, juice of
3 garlic cloves, crushed
4 teaspoons paprika
2 teaspoons cumin
1 teaspoon black pepper
Combine all ingredients for the marinade. Add the fish and leave for 30 minutes. Pan-fry.
