This is copied from a delicious salad I had at the only cafe we deign to go to in Richmond (thank god we’ll soon be in Fitzroy and never have to cook again!). The cafe one was with freekeh not quinoa but I couldn’t find it in the shops. I don’t think they taste that different but apparently freekeh is better for you (and maybe it’s not destroying Bolivia like quinoa is?) so good luck to you for tracking it down. I’m not sold on the dressing so you can just put your own dressing recipe on it if you like.
1 cup of quinoa
2 cups of peas
Half a cucumber
Quarter of a red onion (optional)
Handful of parsley
Packet of halloumi
1 tsp dijon mustard
1 tsp sugar
3 tbsp lemon juice
Quarter tsp minced garlic
Quarter cup of extra virgin olive oil
Salt and pepper
Cook the quinoa according to packet instructions and set aside to cool.
Prep the rest of the ingredients: cook the peas, cube the cucumber, finely dice the onion and finely chop the parsley.
Mix all the dressing ingredients together until emulsified.
Slice up the halloumi and fry in a pan with some oil until browned on both sides.
Mix all ingredients together with the dressing.
