Spaghetti with Tomatoes, Mozarella & Basil

I’m sending you a nice simple recipe to keep the recipe exchange going. What with one thing and another we don’t seem to have cooked anything very original lately. This is very tasty though.

Serves 4

275g baby plum tomatoes
1/2tsp dried oregano
2 garlic cloves, chopped
4tbsp olive oil
300g spaghetti
125g torn mozzarella
Handful of basil leaves

Preheat the oven to 150C. Halve the tomatoes and lay, cut side up, on a parchment-lined baking tray. Scatter the oregano and chopped garlic over the tomatoes, and drizzle with the olive oil. Season and roast for 30 minutes until caramelised.

Cook the spaghetti, then drain and return to the pan. Tip in the tomatoes, then toss with the mozzarella and basil. Season and serve.
